Catering

Kajun Kettle Foods, Inc has a USDA approved catering operation in their 86,000 sq. ft. facility that operates 24/7. Our expert staff produces breakfast, lunch, and dinner at downtown locations for hundreds of people every day of the week.

Our staff produce meals on premises, and then deliver them to their end destination in our own trucks. We design menus with the customers' tastes in mind. We have over 150 items to choose from so you will always have what you want and need. We are on call to handle any issues that should arise.

History

Chef Pierre Hilzim, President of Kajun Kettle Foods, is a New Orleans native who learned to cook at the tender age of ten from his father, the Executive Director of the Louisiana Restaurant Association. Pierre soon became part of that same creative culinary world.

After spending several years running high-end restaurants in San Francisco and designing kitchens for award-winning chefs from Italy, Chef Pierre returned home in 1981 to found Kajun Kettle Foods.

Chef Pierre’s vision was to save local restaurants precious prep-time by providing them with quality, ready-to-serve fresh pastas and sauces. The dishes were wildly popular and Kajun Kettle’s product line grew to include an array of savory sauces, soups, entrées and side dishes.

Monica

 Chef Pierre’s wife and partner, Monica Davidson, joined Kajun Kettle shortly after its creation. Monica has a degree in linguistics from UC Berkeley. Her early career was as an executive with Macy’s, California. Monica now manages Kajun Kettle’s Personnel, Marketing and Public Relations Departments.

Kajun Kettle’s signature dish is one of the biggest stars at the annual New Orleans Jazz and Heritage Festival. Crawfish Monica® is a delicious, creamy seafood dish that is a crowd-pleaser with locals and tourists alike, who snap up thousands of servings at each festival. Crawfish Monica® has attracted rave reviews from The New Yorker, the L.A. Times and the London Times.

Chef Pierre named his sauce creation after his wife and partner, Monica.

Community Involvement

Kajun Kettle Foods is committed to giving back to the community. President Pierre Hilzim serves on the board of NOAAHH (New Orleans Artists Against Hunger and Homeless) and was on the SPCA Board, where he helped organize the popular fundraiser, Howling Success. He convinced over 100 restaurants into participate the first year.

Vice President Monica Davidson has served as a mentor for Each One Save One and the Junior League. She is a Board Member of Goodwill and several neighborhood groups.

Kajun Kettle Foods is a donor to local organizations including the Audubon Institute, Second Harvesters, Raintree Children’s Services, the Louisiana Restaurant Association, the Children’s Museum, the Beautiful Foundation, the Desire Housing Project, the Louisiana American Red Cross and the Historic New Orleans Collection.

Kajun Kettle Foods was also instrumental in the recovery after Hurricane Katrina. Just two weeks after the storm, Kajun Kettle teamed up with the Chef Relief organization to feed Police, the National Guard, healthcare and rescue workers; and supplied shelter operators thousands of meals a day. Additional help also came from many generous food contributors across the country who sent semi-tractor trailers full of food for Louisiana and the Gulf Coast area.
